A little bit about golden berries:
Originally cultivated in the Incan Empire, golden berries are not your average fruit. Sweet yet tangy, these mouth-puckering berries are best noted for high amounts of beta-carotene and bioflavonoids, which support anti-inflammatory and antioxidant activity, among many other benefits.
They are also a great source of vitamin A and C, and contain a good amount of pectin, which is a fantastic source of soluble fiber to keep your digestive system happy. Unlike other fruits, these berries contain a high amount of protein (16%).

Ingredients:
Cabbage slaw:
½ green cabbage, thinly sliced
½ red cabbage, thinly sliced
2 cups of shaved fennel
2 green apples, julienned
2 carrots, julienned
5 sprigs of mint leaves, finely chopped
1 cup of golden berries
Citrus dressing:
Zest from 2 oranges
½ cup of orange juice (use about 1.5 oranges)
1/2 cup of lemon juice (use about 2.5 lemons)
1/3 C of extra virgin olive oil
1.5 tsp of salt
Directions:
Toss all ingredients together in a large bowl, then pour citrus dressing over and serve cold.
