This is one of my favourite salads. I love hummus and fresh veggies! It is super simple and tastes great every time.
Making your own hummus is easy, just blend a can of chick peas (or you can use zucchini if you prefer to be 100% raw), with 2 tsp of tahini. Instead of oil, I just add the juice of 1 to 2 lemons, depending on how much liquid you get out of one. Add a dash of salt and blend in your food processor. You can also add garlic if that is your thing.
Open your fridge and pick out as many fresh veggies as you can! Chop them up into a large bowl. Red peppers, carrots, zucchini, romain lettuce, broccoli, cauliflower... anything you want.
Pour in your hummus and mix into the veggies. Let marinate for 10-15 minutes before serving. This will blend the flavours together nicely.
